  • 1 tbsp wok oil or peanut oil
    1 lb skinless, boneless chicken breast halves - cut into bite-size pieces
    1 medium red bell pepper, chopped
    1 1/2 C. chicken broth
    2 tsp soy sauce
    1 tbsp sugar
    1 clove garlic, minced
    1/4 tsp ground cayenne pepper
    1 (1 inch) piece fresh ginger root, peeled and chopped
  • 1 tbsp cornstarch
    1 bunch green onions, chopped
    1 bunch cilantro, chopped
    2 C. chopped dry roasted peanuts


1. Place a large skillet over medium heat. Heat the oil in it. Cook in it the chicken for 6 min.
Add the bell pepper and cook them until they become tender.

2. Get a small mixing bowl: Whisk in it the broth, soy sauce, sugar, garlic, cayenne pepper,
ginger, and cornstarch. Stir it into the skillet with green onion and cilantro.

3. Cook them for 6 min until the sauce becomes thick. Fold in it the roasted peanuts. Serve
your stir fry hot.
